Succulent chicken in a creamy mushroom sauce is a simple yet an elegant dish. It’s one of the easiest sauces you will ever make. The mushroom, onion and green chili flavor combination is so yummy you wont stop “taste-testing” the sauce while cooking. My kids who generally don’t like mushrooms really enjoy it too!!! Mushroom sauce: Finely chop up some red or white onion and braise in 1/2 tsp olive oil. Add in chopped green chili and garlic and throw in a punnet of sliced mushrooms. Cook until the water dries out and season with lots of salt and pepper. Take off the heat and let the mushrooms cool down and then mix in a tub of fat free smooth cottage cheese. Sprinkle some chopped parsley on top. Served best with a grilled, chicken, fish or steak......
