My daughters and I adore the tuna slaw sandwiches @woolworths_sa. While on summer break, I’m not packing lunch boxes but making up quick and easy meals for them at home. Children at home during the holidays are continuously hungry. I make a batch up of these Tuna Slaw Baguettes, individually stretch and seal them so that girls and I can help ourselves when we feel peckish. This is my take on the tuna slaw.
Tuna Slaw Baguette 1/2 cup shredded cabbage 1/2 cup shredded carrot 1/3 cup Chopped cucumber, peppers and red onion 1 tin tuna For the dressing: 1/2 tsp suki sugar 1/2 tsp salt 1/2 tsp ground pepper 1 1/2 tbsp Balsamic vinegar 1 tsp Olive oil 1/2 tsp Dijon mustard
1. Combine tuna with cabbage, carrots, cucumber, peppers and onion. 2. In a separate bowl add salt, pepper, and balsamic vinegar. Slowly add the olive oil, stirring very well until fully incorporated. Pour dressing over the tuna salad. Let it rest for 5 mins. 3. Spread Fat free cottage cheese into the rolls. 4. Add gem lettuce leaves or baby spinach leaves. 5. Fill with tuna slaw and nom, nom, nom!!!!!
