This simple healthy salad of sweet potato chunks makes a great alternative to a traditional mayonnaise-based potato salad.
Sweet potatoes have a creamy texture and a sweet-spicy flavour that makes them ideal for savoury dishes. There are two types, one with bright orange flesh, the other with pale cream. Sweet potatoes are rich in fibre, vitamins A, C and B6, and an excellent source of carbohydrates. The orange-fleshed variety are also rich in betacarotene. Sweet potatoes are traditionally baked, roasted or mashed, but they can also be added to risotto, pasta or curry and yummy in a salad for a summer braiii. Sweet Potato Salad 3 large orange flesh sweet potatoes cut into biggish chunks For the dressing 1/2 red onion finely chopped 4 spring onions finely sliced, keep half for dressing and the other half to sprinkle on top. 4 tbsp balsamic vinegar 1 tbsp extra-virgin olive oil 1 tbsp honey 1/2 tsp suki sugar Salt and pepper 1. Boil the sweet potato chunks in salted water until tender. Leave to cool. 2. When just about cool whisk together all the dressing ingredients with a little more seasoning and gently toss through the potato chunks. 3. Garnish with left over sprig onions on top. 4.
