If you’re tired of having a a tuna salad time and time again then try these tuna and courgette fritters. They are protein packed and low carb perfect for meal 5 on @shazeats_mandysway eating plan.
Ingredients * 1 tin of tuna * 2 grated courgette * 1 large egg * 1 tbsp coconut flour * 1 tbsp lemon juice * 2 tsp sweet chili sauce * 1/3 cup sweetcorn * Some chopped peppers * 1/4 chopped red onion * Chopped coriander * 2 tsp dried chili flakes or 1 whole fresh chili, finely chopped * salt and pepper * 1 tbsp psyllium husk optional, but helps to improve the texture. Instructions 1. Open the tin of tuna,drain water , flake tuna into small bits 2. Grate zucchinis, squeeze out excess moisture. 3. Add tuna, egg, zucchinis and chopped vegetables together and mix together thoroughly. 4. Combine coconut flour with spices and other dry ingredients and add to the tuna mixture. 5. Mix everything together thoroughly. 6. Leave to stand for 5 minutes or so – coconut flour will absorb moisture and make the mix more sticky 8. Spray and cook a frying pan 9. Make 8- 10 round small patties 10. Dry fry on a medium heat for about 4-6 minutes on each side, or until golden brown.
Serve with fat free cottage cheese and sweet chilli sauce. Yum, yum on a weekend!!!
