I love the mix of sweet, salty and a bit of heat together for main dishes. I had some mangoes that were ripe and that needed to be used up. I decided to make chicken salad with mangoes and chopped raw vegetables. This is a mouthwateringly delicious change up from what I usually have as a snack for meal 2 and 4 on @shazeats_mandysway. The combination of all these fresh ingredients livens up your everyday meals and thrills your taste buds.
* 1 mango cut into cubes * 2 radishes sliced * 1 spring onion chopped * 1/2 cup chopped mixed peppers * 1/4 cup chopped red onion * 2 green chillies (or to taste) deseeded and finely chopped * juice of 2 lemons * 1 cold cooked chicken breast cut into chunks * 1 large handful fresh coriander chopped * 2 teaspoon olive oil METHOD 1. Mix the mango cubes, and all other chopped vegetables into a bowl and, add chilli and squeeze over the lemon juice. 2. Add the chicken, drizzle over the olive oil and salt and pepper for taste. Sprinkle over the coriander and nom nom nom.
