Portuguese Rice and Steak

My version of Portuguese Rice is a delicious tomato rice cooked with lots of Mediterranean Vegetables, spiced with paprika accompanied with a simple marinated Portuguese Steak. There are lots of versions of these traditional recipes but I find this one most satisfying to the appetite!! 

Portuguese Rice Ingredients 2 cup cooked rice 1 tbsp olive oil 1 tsp garlic 1/2 cup onion chopped 2 tomatoes crushed 1 chopped green chili 1 tbsp paprika Salt and pepper to taste 2 cups assorted chopped vegetable mushrooms, courgettes, chopped mixed peppers, aubergine Method 1. In a pan add the onions and garlic and soften the onions. 3. Add tomatoes with their juice, green chilli, paprika powder, salt and pepper and simmer for a few minutes. 5. Add the vegetables and stirfry for 4-5mins. 6. Add the cooked rice and mix through with the tomatoey vegetables. 7. Place the lid on and steam for another few minutes. 9. Remove from heat and fluff with fork before serving.

Portuguese Steak 1. Marinate 500g of tenderized Steak (cut into 1/2 inch thick sliced) with 2 tsp crushed garlic, 1 juiced lemon, 1 tsp black pepper, 1 1/2 tsp salt. 2. Heat 1 tbsp olive oil and add slices of fresh garlic, 3-4 birds eye chili and a bay leaf. When they start to sizzle place the slices of steak on top and cook. Serve with Portuguese Tomato Rice and enjoy !!!!
