Prawn Pasta

Eating Well, doesn't have to mean no pasta. This Prawn Pasta, with chilli and and fresh sliced vegetables is perfect mid-week lunch when you're trying to be good. This recipe is speedy to make but packed full of flavor. Cooked in a delicious chilli and siracha sauce, this penne is a favorite recipe. 

Ingredients * 2 cup Woolworths whole wheat penne Pasta * 1 tbsp olive oil * 2 garlic cloves, peeled and finely chopped * 2 tbsp siracha * 2tbsp tomato paste * 1/2 tub fat free cottage cheese * 4 tbsp lemon juice * 2 long red chillies, deseeded (optional) and diced * 1tsp Italian Herbs * salt and freshly ground black pepper * 1 tsp Lemon pepper * 1 cup Sliced peppers,red and green * 1 cup Sliced mushrooms * 1 cup Sliced red onion * 400g cooked and peeled tiger prawn * A crisp salad, to serve Method 1. Cook the pasta according to the packet instructions. Drain and set aside. 2. Heat the oil, add the garlic, red chillies, sliced vegetables, season well, add the siracha, tomato paste and lemon juice. 3. Add the prawns and heat through for a minute or two. 4. Add the drained pasta, remove from the heat for a few mins and fold through the cottage cheese and stir and mix well.
