There are only two or three places in the whole world where saffron grows. Kashmir has the proud privilege of being one of these places. There are two locations in Kashmir where saffron grows. One of these two places is Pampur. Pampur is a small town, which is 13 km from Srinagar. The saffron plant is very small and its flower is the only part which is seen above the ground. The blooming time of this flower is autumn. Saffron has a unique sweet smell and boiled with water, cinnamon and cardamon makes a good blend of tea. While being here, the Kashmiri Saffron Tea almost like a green tea is served continuously. The people have it here all day before and after meals and it is known to have lots of health benefits the most important being in fighting colds and flus. Chef, Ali Mamunds, Recipe for Kashmiri Saffron Tea SERVES 2-4 Ingredients ¼ tsp. saffron threads 3 green cardamom pods 1 cinnamon stick 6 thinly sliced blanced almonds Honey/ sugar for taste Instructions Bring 3 cups water, saffron threads, green cardamom pods, and cinnamon stick to a simmer over medium-high. Cook until color of tea is golden amber, 2–3 minutes. Divide sugar and almonds between glasses; pour tea on top.
