So last week at the walkabout with kids in Houghton not only did I take my Chocolate Oat Muffins but also a platter of Spinach, Sweetcorn and Feta Muffins. A friend, of mine asked for the recipe yesterday morning. A recipe request always makes my heart sing. I love to share recipes of my favorite eats ....as Barney always says sharing is caring 💜 Spinach, Sweetcorn and Feta Muffins 1/2 onion chopped Mixed peppers chopped 1/4 cup shredded spinach or fenugreek 1 tsp salt 1/2 tsp pepper 1/3 cup Woolworths low fat cheese 1/4 cup fat free feta 1 tbsp olive oil 4 eggs 2 baby courgettes grated 1 carrot grated 2 chilies finely chopped Sprig of coriander chopped 1 cup frozen corn kernels 1/2 cup self raising flour 1 tsp Sesame seeds 1. Combine all the ingredients together. 2. Spray And Cook muffin pans. Pour batter into pans. Top with feta and sesame seeds. Makes 12 big muffins or 24 mini muffins. I make the mini. 3.
