This warm beetroot salad that has been enhanced up with feta, date and nuts. It is beautiful in colour and packed with nutrients. This is wonderful salad to tuck into at at Iftar/fast breaking as it is a combination of sweet, sour and salty. Roasted Beetroot, Himalayan Sea Salt and Dates are all foods that the Prophet Muhammed (SAW) would include in his diet. Every time you eat try and nourish yourself with prophetic inspired food. Instructions:
*3 tablespoons malt vinegar * 1 teaspoon suki sugar * 1/2 red onion thinly sliced * 4 beetroot peeled, cut into 2-3cm cubes * olive oil for cooking * 1/2 cup raw almonds chopped * 3 garlic cloves, chopped * 1 tbsp ground sumac * 1/2 tsp chilli flakes * bag of baby spinach * 4-5 mejdool dates chopped * 1/2 cup fat free feta crumbled * extra virgin olive oil for dressing salad Preheat oven to 200°C. Line an oven tray with baking paper. 1. In a bowl, mix vinegar and sugar. Add onion and toss to coat. Set aside in the fridge to marinate for about 20 minutes while you prepare the rest of the salad. 3. On the lined tray, toss beetroot with a good drizzle of olive oil and season with salt and pepper. Roast for 30-40 minutes or until tender. 5. Dry roast almonds and garlic for about 2 minutes until golden. Turn off heat and mix in sumac and chilli. 7. When ready to serve, drain red onion (reserve vinegar) and toss with salad leaves, beetroot, almonds, dates and feta.
